Our main goal is to bring the true flavors of Mexico to you. If you close your eyes, the taco party in your mouth will truly transport you to the streets of Mexico with its aromas and flavors.

Techniques from our heritage

Our signature tacos are tacos al pastor (from Spanish, lit. shepherd style), which is a dish developed in Central Mexico, based on shawarma spit-grilled meat brought by the Lebanese immigrants to Mexico.

The Mexican style is also similar to the Turkish döner kebab and the Greek gyros. Although shawarma and döner are usually lamb-based (thus the "shepherd-style" name), gyros and tacos al pastor in Mexico are pork based.
In some places of northern Mexico, as in Baja California, this taco is called taco de adobada.

For its preparation, the pork is marinated in a combination of dried chiliesspices and pineapple, and then slowly cooked with a gas flame on a vertical rotisserie called a trompo (lit: spinning top), with a piece of fresh onion and a pineapple on top. When ready, the meat is then thinly sliced off the spit with a large knife. It is served on small tortillas, with finely chopped onions & cilantro, a small slice of pineapple. Make them tacos even more bomb, by topping them with some lime juice and fresh made salsa

Keeping it Real

"Con todo, por favor" - A phrase you will hear in any taco stand in Mexico, which means "with everything, please."  Everything includes all the original taco toppings: cilantro and onion with a lime wedge.

We promise (kiss on thumb over index finger) THAT'S how you'll get your tacos, con todo! There is no better way!

How We Do Street Food

Our version of a food truck: Taco stand! There is nothing, and we mean NOTHING, like eating a street taco, on your tippy toes, flicking your pinky while holding your taco and standing on the sidewalk rim juuust to be able to be as tall as the flat top grill... nothing.
